Dual Screen Setup

I have a Dual Screen Setup (I'd have 3, but I don't have money right now.), I can play games line CSS, TF2, etc etc fine on Both Screens, but it seems like San Andreas only lets me go up to 1280x768x32 Resolution. I've tried running it in Windowed Mode, but you cannot stretch games like you can with normal windows.

My resolution is 2560x1024 - Matching Monitors, I'm running Windows XP, in Horizontal Span mode.
Anyone have any answer to why I cannot seem to get it to run at my maximum resolution?

And for you curious minds - I have tried to play Crysis on it.. and oh my god. my FPS was like 14 :S
