When completing it, can you do whatever the f**k you want like free-roam, or you just can start all over again?

I doubt you can actually 'complete' it.
I played 175 hours so far, have 256 locations discovered, and still got plenty empty places on the map.
Let's say you need about 300+ hours to 'complete' most of the quests and locations.
Considering there will be a few huge add ons in the future(with about the same size as the current game), Skyrim will probably never end, like Comrade said.

So, I completed the Nightingale questline. Karliah is a fine piece of Dunmer, right?

fucking hell, so many, i just did the theives guild then found out i can fight a actual war, then i joined the stormcloaks cause the fucking empire almost cut my head off even though i was caught by mistake and wasnt on the killing list and now im gonna fight as a stormcloak!

On the other hand, Stormcloaks are racist rebels with a powerhungry leader. They basically hate everyone who ain't a Nord, especially elves.
Not to mention how they fight a war so that they can bring the old war back.

...I still play as a Stormcloak though, but that's mainly because my character is a Nord.


And thanks Andros, I'll try that. But ye know where I could get more of those Jarrin Roots? That poison can fucking onehit Elder dragons if given a good shot.

I also found out that i can make arrows with feathers, iron shit and if i chop wood.

Yes, but no.
It is implemented in the game files, but it is not available in the actual game. I assume it was either buggy or they simply forgot adding it and may come in future patches/expansions. Currently there are mods for it, but I don't like modding games.
