1. Screen stretches, but leaves black spaces on top and bottom, or left and right.
For this, the problem is that you're using a resolution with a different ratio to that of your monitor (eg. using a 16:9 resolution on a 16:10 monitor). Therefore, to counter this problem, you can simply create a custom resolution that's close to the resolution you want to use, but maintains the same ratio as your monitor.

For example, you may have a monitor that supports a maximum resolution of 1680x1050. This makes its ratio 16:10, since 1680/1050 = 1.6 = 16/10. Now, if you were to play a game in full screen while using a lower resolution of say 800x600, which is a ratio of 4:3 (800/600 = 1.333 = 4/3), your system would not be able to completely scale the game to fit the monitor, since Windows 7 can't change the ratio while scaling low resolutions. The result would be two black bars on the left and right on your screen. Therefore, if you want to play on such a low resolution without having to deal with black bars, then you have to create a custom resolution that has the same ratio as your monitor. For the case of 800x600, which is 4:3, you can create an custom resolution of 800x500, which is 16:10, thus your system would be able to stretch it to fit the screen entirely. To create a custom resolution, you can to go to your nVidia or ATI control panel. Otherwise, there may be an option to do so in your normal display settings.

I guess, but how is it possible to force this 'custom resolution' to the screen because all I see is a restricted list of resolution settings, I use an ATI by the way.

I use NVIDIA, so I can't really guide you through how to set up a custom resolution properly, nor am I completely certain that ATI fully supports it, but for the moment I'll assume it does. If it doesn't, then I'd advise googling for something that does, since I've heard that there's programs you can download to manage custom resolutions.

Anyway, once you've created a custom resolution, it's meant to automatically appear in the list of available resolutions in your game's graphics settings. If it doesn't, my only advice is to check that you've created it properly, check for any options that you need to turn on to allow custom resolutions to work, or update your display drivers.

Apart from that, I can't really detail any more, since I don't use ATI.

I'm only knowledgeable on the NVIDIA control panel, but here's the result of a quick google:

Go to the ATI Catalyst Control Center (by right Clicking on the desktop and choosing to go to the ATI Control Center), On the top left there will be a drop down menu, click on it and choose   "Desktop & Displays"  On the bottom half of the screen Right click on the icon of your display, and choose "Configure,"  On the next screen choose "Scaling Options" tab you can then slide the rul all the way to 0% scaling and you should see the screen change to cover the full monitor.

Im not sure if this will work, But could you right click on the desktop and edit it there? I know it works on XP, I got rid of Win 7 a while ago.

Update the driver for your graphics card from the NVIDIA website. The drivers comes with the latest control panel, so it may fix your problem.
