The 2 left screens are connected via DVI, the right with displayport. Whichever display is connected via displayport has this odd color and brightness, I should probably test the cable but I'm too lazy.

Well Nvidia surround, is bad on 2 monitors, but I would really like to play games on three, as well it would look just amazing.
I want to do it but is it really worth it?

IMO nope.
If you want a Gaming PC buy the parts and build your own, I wouldn't trust pre-built computers one bit never know what's in it.
