I hope they changed the VERY irritating easy hs with Deagle like on CSS and things like when you jump, you shoot everywhere except on your target. I mean, while you're jumping, you still keep aiming at the target... same for running

If you want accuracy while shooting in mid-air, Quake would be more suitable for you. Or Enemy Territory.

I only wish they would make the G3SG1 less accurate, more like it was in CS 1.5

How do you mean? How is a headshot with a deagle any easier than with, say, a USP?

Because CS:S does not approve of the perfectly aimed superman diving assaults as seen in CoD. Also you can shoot accurately whilst running, just not for more than 1 or 2 bullets.

Most servers disallow the G3SG1, anyway.
